How to make Chocolate Covered Peanut Butter cookies!

I’m all about chocolate covered treats – strawberries, bananas, pretzels, you name it (chocolate covered bacon is still on my list to try.). If you haven’t tried our chocolate covered cookies yet, you’re in for a TREAT! They are available at our downtown bakery on the weekends and they go fast! If you happen to miss them, don’t you worry! Check out this EASY recipe for chocolate covered Peanut Butter cookies!

This recipe is as easy as it gets! I took home a dozen Peanut Butter cookies and stopped at the local grocery store to pick up a few ingredients. Peanut Butter is one of my favorite cookies, but any cookie works with this recipe! Here’s what you’ll need:

  • One dozen Peanut Butter cookies (BUY NOW or follow THIS recipe to make from scratch!)
  • Semi-sweet Chocolate Chips
  • Chopped Nuts (optional)
  • Sea Salt (optional)
  • Parchment Paper

First you’ll want to melt the chocolate chips. I used 1 cup of chocolate chips which was plenty for one dozen cookies. I placed them in a bowl and put in the microwave for 10-second intervals (did a total of 30 seconds). Be sure to stir the chocolate in between intervals! Once the chocolate is melted, the cookies are ready to be covered! You can cover the cookies in as much or as little chocolate as you’d like! I covered about 1/3 of each cookie.

The chocolate will start to set, so if you’re topping with nuts or sea salt, be sure to do so quickly! I sprinkled the majority of them with nuts and just a few with sea salt. Place the cookies on a lined tray and place them in the fridge. Cookies are ready to eat once the chocolate is hard.

That’s all folks!

I wasn’t kidding when I said this recipe was easy! It makes for a quick last minute dessert option for a party or like in my case, when a chocolate craving hits. Let us know if you try this at home!

When it comes to desserts, we don’t like to single any of them out. Once we realized Sunday is National Ice Cream Day, we knew we had to celebrate! While cookies are our specialty, we do know a thing or two about ice cream.

Marianne’s Ice Cream

Ice Cream is the perfect treat during a nice warm summer day (although we are also those people that eat ice cream on a cold, rainy winter night). If you didn’t know already, cookies and ice cream make a YUMMY duo, and we are committed to serving only the best in our bakery! We have been proudly serving Marianne’s Ice Cream in our shop for over 30 years! Popular among locals and visitors, Marianne’s Ice Cream has been a successful establishment in Santa Cruz since 1947!

As we are also a family owned and operated business, we admire the history of Marianne’s Ice Cream. Lenore and Tom Becker opened the ice cream shop in hopes of putting their daughters (Mary and Anne) through college. In 1958, Sam Lieberman took over and not only did he commit to serving a high quality product, but expanded the “menu” from 13 to over 75 flavors! Fast forward to 2019 and the shop is still in it’s original location on Ocean Ave! Their business has expanded with additional locations in Aptos and Capitola, and delivering products to various restaurants and stores across the Bay Area!

Summer has officially arrived and we cannot be more excited for the warmer weather, beach picnics and longer evenings. With Summer also comes pot lucks, backyard barbecues and 4th of July parties. Are you in charge of desserts this year? If so, we have some ideas that are sure to be a hit!

The Dessert Bar

Dessert bars are a great way for your guests to pick and choose which treats to indulge in after eating all that yummy barbecue food! Brownie bites, cake pops and cookies are great options that will satisfy any sweet tooth (honorable mention: macaroons, doughnut holes and mini cupcakes). The treats can be displayed on tiered trays or in jars and can be labeled by flavor. We like the handwritten labels for a true do-it-yourself look. Here are some of our favorites from Pinterest:

DIY Cookie Bar

If this is your first time hosting a dessert bar, it may be helpful to stick to one type of dessert. For example, you can easily assemble a candy bar with a selection of M & M’s, Gummy Bears and lollipops. If you’re looking for a more scrumptious treat, we think cookies are the way to go!

When it comes to cookies, we believe the possibilities are endless. There’s peanut butter cookies, oatmeal raisin, and who could forget classic chocolate chip?! Having options for your guests is preferred, but you don’t need to go overboard! Two to three flavor options are perfect! We recommend nut-free cookies (for allergy concerns) and providing at least one non-chocolate option for guests who for some strange reason or another do not participate in a chocoholic lifestyle.

Clear jars are perfect for any dessert bar, as the treats are clearly visible but also covered. Target and Bed, Bath & Beyond offer several clear cookie jars. To finish the look, you can take some gift tags and label them with the cookie flavor. There may be a few guests who are simply too full to indulge in treats so having favor bags and twist ties is a must. That way, they can take some home to savor later.
