A s’mores cookie makeover
A few weeks ago I came across Carlsbad Craving’s recipe for S’mores Cookies and was immediately reminded of a warm summer night next to a bonfire. Their attempt of crossing a S’more with a cookie was intriguing and something I have never thought of. With the Summer season approaching, I thought I’d give this classic bonfire treat a cookie makeover!
What you’ll need
The great thing about S’mores is that they are so easy to make! Just a few key ingredients are needed for this nostalgic treat, and it was just as easy making them in the form of a cookie! You can find all ingredients at your local grocery store. Here is what you’ll need:
- Chocolate Chip Cookie Mix (I used Betty Crocker Cookie Mix. Follow Carlsbad Craving’s recipe to make cookies from scratch!)
- One egg
- One stick of softened butter
- Mini Marshmallows
- Graham Crackers
- Hersey’s Milk Chocolate Bars
- Ziplock bags
What to do
I found this recipe to be very kid-friendly! I recruited two of my nieces, ages 3 and 6, who were eager to assist. We started off by throwing a couple of graham crackers into Ziplock bags and crushed them, which will later be thrown into the cookie mix. While the cookie mix already had chocolate chips in it, what are S’mores without Hershey’s Chocolate?! So, we broke up the Hershey Bars into small chunks and may or may not have snuck in a bite or two, for taste testing of course.
Now we are ready to make the cookie dough! We followed the directions on the back of the Betty Crocker Cookie Mix packet, with a few modifications for our S’mores add on’s:
- Heat oven to 375 degrees
- First, stir cookie mix, graham cracker crumbs, and Hershey’s chocolate chunks.
- Mix in softened butter and egg until dough forms.
- Drop dough by rounded teaspoons (or tablespoons for a larger cookie) 2 inches apart on ungreased cookie sheet.
- Bake for 8 – 10 minutes, or 9 – 11 minutes for larger cookies.
Don’t forget the marshmallows!
You’re probably thinking, WAIT, what about the marshmallows?! Don’t worry, we didn’t forget about them! About a minute before you are ready to take the cookies out of the oven, you’ll want to add in the marshmallows. We simply stuck them right on top of the cookies!
We put the cookies back in the oven for about a minute or so. The marshmallows will melt quickly, so only put them on the cookies at the end of baking. The aroma in the kitchen will remind you of the warm summer night I mentioned earlier!
We allowed the cookies to cool before eating, and they were absolutely delicious! The graham cracker crumbs and the melted marshmallows on top gave them the perfect s’mores taste!
