Recipe – Apple Pie Cookies

Happy π Day! In honor of this little mathematical constant, we’ve found an Apple Pie Cookie recipe that is infinitely delicious! Mad props to the blog, Oh, Bite It! for sharing this wonderful recipe!

  • 1 Box of frozen Pillsbury Pie Crust (2 sheets per box)
  • 1 Can of Apple Pie Filling
  • 1 Cup of Caramel Sauce
  • 1 Egg – for egg wash
  • 2 tbsp. Cinnamon/Sugar
  • 1 tbsp. Nutmeg
  • Flour for sprinkling
  • Round Cookie Cutter


  1. Preheat oven to 350.
  2. Lay out a sheet of pie crust, sprinkle it with some flour and slightly roll it out to increase its surface area.
  3. Pour just enough of the caramel sauce and spread it evenly to coat the crust.
  4. Coarsely chop the apple pie filling into small pieces.
  5. Top the caramel you spread on your pie crust with the apple pie filling – don’t go overboard no matter how much you want to!
  6. Roll out the second sheet of pie crust to be the same size as the first sheet and slice it into strips.
  7. Create a lattice crust (just like on a pie) for the top of the pie filling.
  8. Oh, Bite It! recommends NOT creating the lattice on your kitchen counter!
  9. Get your cookie cutter and dip it in the egg wash.
  10. Cut out your pie cookies.
  11. Brush the tops of your pie cookies with the egg wash along with some cinnamon sugar and nutmeg.
  12. Place them onto a baking sheet and bake for 20-25 minutes until they are golden and firm.
  13. Enjoy!
