Weekly Wednesday Recipe

My husband and I decided to take a drive up the coast from Santa Cruz to Half Moon Bay this past weekend.  Along the way we came across several farms selling pumpkins and my mind instantly went from ‘oohhhh pumpkins’ to ‘uummmm pumpkins’.  I love all things made from pumpkin so I went home and baked up a batch of my Mother’s recipe for pumpkin chocolate chip cookies.  I hope you all enjoy this recipe as much as my family does.

Ingredients:

  • 4 cups flour
  • 2 cups sugar
  • 4 teaspoons cinnamon
  • 4 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons vanilla
  • 2 teaspoons milk
  • 2 large eggs
  • 1 15 oz. can pumpkin puree
  • 1 12 oz. package mini chocolate chips

Directions:

Preheat oven to 350 F. Line 2 cookie sheets with parchment. In a large bowl, mix all dry ingredients together (except the chocolate chips) with a spoon until well blended.  Add in remaining ingredients (again excluding the chocolate chips) and combine with a mixer on low speed until thoroughly blended.  Stir in the chocolate chips and drop batter on prepared cookie sheets.  (I always use a 2 tablespoon scoop simply because that it what I have) Bake for 15 minutes.
